We take 17 years from maturing our Kunugi trees (Japanese Sweet Sap Oak) to cultivating the logs and then producing the first growth Shiitake. Rushing this process produces an inferior Shiitake.
It takes 15 years to mature the Kunugi trees used for the Shiitake log used to grow Shiitake. It takes another 2 years for the first Shiitake growth cultures to take hold and grow into Shiitake. Kunugi logs can be used approximately 5 years before being replaced. The Kunugi log cultivation is a long and natural process which is environmentally friendly and sustainable.
