Shiitake powder transforms salted mackerel into something greasy and wonderful!

When you rub shiitake powder on salted mackerel and leave it for 30 minutes before grilling, it brings out a more distinctive and richer tasting mackerel!

Mackerel's naturally rich buttery flavor is it's own unique umami, which the shiitake powder enhances.

To keep in check the sometimes assertive shiitake flavor, only a small amount of shiitake powder is needed.

Ingredients (one people)

  • one fish (side) salted mackerel
  • 1/2 tsp shiitake powder

Steps

Rub shiitake powder into salted mackerel and let sit for 30 minutes.

If grilling mackerel in a pan, start from the skin side down over low heat. When skin is browned, discard the oil, turn the mackerel over and cook the other side over medium heat for 3-4 minutes.

If cooking mackerel on the grill, preheat thoroughly and cook skin side down over medium heat for 10 minutes.

Point

Some salted mackerels are quite salty and shiitake powder will bring out an even saltier taste, as well as the umami taste. For saltier mackerels, we recommend reducing the salt content by soaking the mackerel in about 1% salt water for about 1 hour.
