Simmered Shiitake and Dried Sliced Daikon Stir Fry
Simmered dried sliced daikon and Shiitake mushrooms sure does warm you up. You will want to eat this side dish every day.

Steps

Rinse the dried sliced daikon radish and carrot mix and the dried gobo, rehydrate them in lukewarm water, and squeeze out excess water.

Rinse the dried Shiitake mushrooms and soak them with the kombu in 200ml of water to rehydrate. When they are rehydrated, cut off the stems and slice. The soaking liquid will be used later.

Drain the oil from the deep fried tofu and cut it into bite-size pieces.

Add vegetable oil to the pot, heat to medium temperature, add ingredients ①, ② and ③, and stir fry.

Add the reserved Shiitake and kombu liquid. When it reaches a boil, add the seasonings marked A and simmer at medium heat.

Lastly, add the snow peas, allow it to reboil, and it's done.
