Shiitake and Citrus Salad

Shiitake and citrus salad! The rich Umami of Shiitake actually goes well with citrus fruits. Steam them in grapefruit juice, dress them with the fruit pulp, and serve them cold. It's easy, so please give it a try. Recipe provided by: Hattori Nutrition College

Ingredients (4 servings)

  • 8 Dried Shiitake
  • 1 Grapefruit (fruit)
  • 1 Grapefruit (juice)
  • 1 Tbsp Olive oil
  • to taste Salt and pepper
  • to taste Italian parsley (finely chopped)

Steps

Soak the Shiitake in water to rehydrate then, then cut each mushroom into 2 - 4 pieces.

Add the olive oil, mushrooms from step 1, and grapefruit juice to a frying pan and steam on high for 3 minutes.

Season to taste with salt and pepper. Add the grapefruit and chill.

Plate with parsley as a garnish.

Shiitake and citrus fruits are an unexpectedly good match! Enjoy the crisp and refreshing flavor. For the fruit juice, use the amount that’s released when you cut the fruit and what you can squeeze out from the peel after cutting.
