Shiitake and minced chicken seaweed rolls

This is a simple and healthy seaweed roll recipe. The Guanylate of the dried Shiitake mushrooms adds wonderfully to the Umami taste of the chicken.

Ingredients (4 servings)

  • 10g Dried Shiitake mushrooms (coarsely chopped)
  • 6g Green onion (finely chopped)
  • 10g Carrot (finely chopped)
  • 100g Minced chicken
  • 2 sheets Seaweed (halved)
  • 1 tsp Sugar-A
  • 2 tsp Miso-A
  • 2 tsp Mirin-A
  • 1 tsp Soy sauce-A
  • 1 tsp Sake-A
  • 1 Tbsp Potato starch-A
  • to your liking Lemon (garnish)
  • to your liking Shiso leaves (garnish)


Rehydrate the dried Shiitake mushrooms in water and chop them coarsely. Finely chop the green onion and carrot.
Mix 1 with minced chicken and the ingredients marked with A.
Roll the contents of 2 with seaweed and wrap with plastic wrap.
Microwave (600W) for 2-3 minutes.
