Simmered Shiitake with Sesame Seeds!! Please cook a lot of simmered Shiitake and arrange them in various dishes. Leftover simmered Shiitake can be breaded and fried to make a snack that's a big hit with kids.

Ingredients (2 servings)

  • 10 Dried Shiitake
  • 2 Tbsp White sesame seeds
  • 180 ml Shiitake soaking water-A
  • 2 Tbsp Sake-A
  • 1 Tbsp Soy sauce-A
  • 1 Tbsp Mirin-A
  • 1 Tbsp Vinegar-A

Steps

Rehydrate the dried Shiitake mushrooms and remove stems. Strain the liquid with a tea strainer.

Add the Shiitake and the seasonings marked with A to the pot and bring it to a boil, then put on a lid and reduce heat, simmering until the cooking liquid is reduced to about 1/4.

Serve it into a dish, sprinkle on plenty of white sesame seeds, and it’s done.
