Cold Shiitake Potage Soup

Add drops of fresh cream on top to make it look really fancy! It will look like a dish served at a restaurant! As the Umami taste of dried Shiitake is derived from Guanylate, a nuclei acid-based Umami component, it may taste bitter when the Dashi broth is too thick. This cold soup tastes delicious, but leaving it in the refrigerator for too long will increase the possibility of it tasting bitter. When that happens, all you need to do is dilute the soup.

Ingredients (2-3 servings)

  • 30g Dried Shiitake
  • 1/4 Onion (finely sliced)
  • 1Tbsp Butter
  • 2 Tbsp Rice -A
  • 2 cups Water -A
  • 1cups Milk -A
  • 1/2tsp Salt -A
  • to taste Pepper
  • to taste A few drops of fresh cream

Steps

Rehydrate the dried Shiitake and slice them.

Melt the butter in a pot, then stir fry the Shiitake and thinly sliced onion until tender.

Add A to 2., cover with a lid, and bring to a boil, then simmer on low heat until the rice is cooked through.

Blend 3. in a food processor until smooth and let it cool. Sprinkle with pepper and fresh cream, to taste.
