Shiitake Menchi Katsu (Ground Meat Cutlet)

Use dried Shiitake to make Menchi Katsu even more delicious! Mix vegetables and Shiitake into the minced meat for a healthy and hearty meal. Minced meat mixture contains protein, B-complex vitamins, and iron, which are perfect for bodybuilding. The juicy meat will make for a very satisfying meal. By kneading the meat with your hands, the fat in the meat will melt due to your body temperature and help hold the whole patty together. Ingredients (4 servings)

  • 450g Aibiki (7:3 beef:pork) minced meat
  • 1 & 1/2 (300g) Onions (finely chopped)
  • 5 pieces dried Shiitake (coarsely chopped)
  • 1 Tbsp Vegetable oil
  • 150g Cabbage (finely chopped)
  • 4.5g Salt -A
  • A pinch of pepper -A
  • A pinch of nutmeg powder -A
  • 1 & 1/2 Egg
  • as necessary Cake flour
  • as necessary Beaten eggs
  • as necessary (Panko) breadcrumbs
  • as necessary Oil for frying
  • 2 Potatoes (garnish)
  • 1/2 Carrot (garnish)
  • 10g Butter (garnish)
  • as necessary Watercress (garnish)

Steps

Rehydrate the dried Shiitake in water. Squeeze the Shiitake well and dice into 5mm cubes.

Finely chop the onions and cabbage. Dice the potatoes and cut the carrots into 5cm thick sticks.

Heat up half of the vegetable oil in the frying pan and stir fry the onion and Shiitake until translucent before transferring it to a stainless steel tray to cool.

Stir fry the cabbage with the remaining vegetable oil, season lightly with salt & pepper (not included in the ingredients), and set aside to cool.

Mix the minced meat with the A ingredients and knead well until sticky before adding 3. and 4. Then, knead well again before adding the egg and mixing well.

Divide the mixture from 5. into 8 equal parts, shape them into ovals, and coat them with the cake flour, beaten egg, and breadcrumbs. Then, deep fry them in oil.

(Deep fry in oil at 180 degrees Celsius for 5 minutes, take them out and set aside to cool for 3 minutes, and deep fry again in the oil for 3 more minutes.)

(Garnish) Boil the potatoes and carrots separately and coat the potatoes with butter once cooked.
