Shiitake and Oyster Omelette

We added dried Shiitake to the famous Taiwanese food stall dish “?仔煎, O-a-tsian” (Oyster omelet), and it was supremely delicious! The savory combination of Oyster and Shiitake are a perfect match!

Ingredients (serves 2)

  • 2 pieces(5g) Dried Shiitake
  • 150g Oysters
  • 2 Eggs
  • 1 clove Garlic (minced)
  • as needed Salt and pepper
  • as needed Rice flour
  • as needed Cooking oil
  • 1 Tbsp Oyster Sauce
  • as needed (small amount) Sesame oil

Rinse Shiitake mushrooms, soak in water to rehydrate, and slice.
Season oysters with salt and pepper and coat with flour.
Add oil to frying pan and saute garlic over low heat until fragrant. Increase heat to medium, then fry oysters and shiitake mushrooms (lightly squeeze the mushrooms to remove excess water).
Add beaten eggs to 3), and then add oyster sauce once the eggs are half-cooked, and mix briefly. Add aroma with sesame oil.

Rehydrating dried Shiitake with cold water gets rid of bad odors and brings out more sweetness and flavor.
