Simmered Shiitake in soup

Dried shiitake mushrooms make the soup of daikon radish and chicken taste delicious and wholesome.

Ingredients (4 servings)

  • 3 dried Shiitake mushrooms
  • 3 string beans
  • 1/4 carrot
  • 2 cm daikon radish, sliced into rounds
  • 150 g chicken meat
  • 1 Tbsp sesame oil
  • 1/2 tsp grated ginger
  • 800 ml water
  • to taste Salt and pepper
  • 2 tsp chicken soup stock -A
  • 1 Tbsp sake -A
  • 1/2 tsp salt -A
  • 1 Tbsp soy sauce -A

Steps

Soak dried shiitake mushrooms in water and cut into bite-sized pieces. Cut string beans, carrots, radish and chicken into bite-size pieces.

Heat sesame oil in a pan, add chicken and grated ginger and saute.

When the chicken changes color, add the Shiitake, carrots, and radish and saute over medium heat until softened.

Add water and seasoning -A to 3 and cook over medium heat for 10 minutes until vegetables are tender.

Add the string beans and cook briefly, season with salt and pepper.

Dried Shiitake mushrooms should be rehydrated in cold water to make them sweeter and tastier without any messy taste.
