Tacos with Salad and Shiitake-infused Pico de Gallo Salsa

  • 5 pieces Dried Shiitake (small type)
  • 1 Tomato
  • 1 Red onion
  • 1 coriander
  • 1/2 Lemon
  • 1 Lime
  • 1 tsp Salt
  • 1 tsp Cumin powder
  • 1 tsp Paprika powder
  • 1/4 tsp Ground red pepper

Soak the dried Shiitake in water and parboil.

Finely mince the tomato, onion, coriander, and Shiitake and add them to a bowl.

Squeeze the lemon and lime into 2., add salt, and mix well.

Add cumin powder, paprika powder, and ground red pepper into 3 and mix well.
