The guanylic acid in the dried shiitake mushrooms enhances the umami of the proteins in the tofu and eggs, which increases appetite. Use the broth of the dried shiitake mushrooms to make this dish full of umami.
Allicin, the aromatic ingredient in green onions, helps the absorption of vitamin B and is effective in relieving fatigue.
Carrots are rich in carotene, which boosts the immune system and has a beautiful effect on the skin.

Depending on how well you cook the eggs, you can adjust the recipe from egg-and-meat style to egg stir-fry.

Ingredients (4 people) (10 min)

  • 15g Sliced dried Shiitake mushrooms
  • 3 Eggs
  • 1/3 Carrot
  • 1 Tofu
  • 1 Tbsp Shiitake broth
  • 2 Tbsp Triple concentrated Men-tsuyu
  • 1/2 Tbsp Sugar
  • 1 Tbsp Sesame oil
  • as needed Green onion
  • as needed White sesame seeds

Steps

Soak sliced shiitake mushrooms in water. Cut carrot into thin strips.

To increase the Umami (flavor), bring the rehydrated Shiitake mushrooms to a boil in a pot with the broth and drain. The broth will be used later.

Pat tofu dry with cooking paper and cut into 6 to 8 equal pieces. Beat the eggs with the Shiitake mushroom broth. Mix together Mentsuyu and sugar.

Heat sesame oil in a frying pan and fry Shiitake mushrooms and carrots.

Add tofu and Men-tsuyu and fry gently. When the tofu is cooked, add beaten egg.

Serve in a bowl and sprinkle with sesame seeds and green onions to finish.

Point

Use 2 Tbsp (30cc) for triple-concentrated Men-tsuyu, 50cc for double-concentrated, and 25cc for quadruple-concentrated.
