Lemon-flavored Asparagus & Shiitake Rice

Spicy and refreshing lemon rice with a delightful aroma and texture. Shiitake enhance the aroma of cumin and turmeric. And the citrus juice and Shiitake go perfectly together! It goes perfectly with curry too.

Ingredients (2 servings) (30 minutes)

  • 1 cup Rice
  • 1 Tbsp Ginger (finely chopped)
  • 4 dried Shiitake
  • 4 sprigs Asparagus
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Mustard seeds (if available)
  • 2 Tbsp Lemon juice
  • 1 tsp Salt
  • 1 Tbsp Olive oil
  • A pinch of pepper
  • Salt, as necessary

Steps

Cook 1 cup of rice as you would normally. Rehydrate the dried Shiitake and roughly chop them.

Finely chop the ginger. Cut the asparagus diagonally.

Add olive oil to the frying pan and stir fry the cumin seeds and mustard seeds.

Once they are fragrant and start to pop, add the ginger, Shiitake, asparagus, turmeric powder, and 1 tsp of salt, and stir fry.

Loosen the rice and add to the pan, then add lemon juice and stir fry.

Lastly, taste it and adjust the flavors with salt and pepper.
