Shiitake and Oyster Omelette

We added dried shiitake mushrooms to the popular Taiwanese food stall dish Ô-á-tsian, and it was supremely delicious! The savory combination of shellfish and shiitake mushrooms are a perfect match!

(serves 2)

Dried shiitake mushrooms
2 pieces(5 grams)
Oysters
150 grams
Eggs

Garlic (minced)
1 clove
Salt and pepper
as needed
Rice flour
as needed
Cooking oil
as needed
Oyster Sauce
1 tablespoon
Sesame oil
as needed (small amount)

Rinse shiitake mushrooms, soak in water to rehydrate, and slice.

Season oysters with salt and pepper and coat with flour.

Add oil to frying pan and saute garlic over low heat until fragrant. Increase heat to medium, then fry oysters and shiitake mushrooms (lightly squeeze the mushrooms to remove excess water).

Add beaten eggs to 3), and then add oyster sauce once the eggs are half-cooked, and mix briefly. Add aroma with sesame oil.
